Greek Lemon Chicken & Potatoes (One Pan) 

Ingredients: 

  • 6 bone-in chicken thighs (or breasts) 

  • 1 ½ lbs baby potatoes, halved 

  • 1 lemon (juice + zest) 

  • 3 tbsp olive oil 

  • 1 tbsp dried oregano 

  • 4 cloves garlic, minced (or 1 tsp garlic powder) 

  • Salt & pepper to taste 

Instructions: 

  1. Preheat oven to 400°F. 

  1. Toss chicken + potatoes with olive oil, lemon, oregano, garlic, salt & pepper on a sheet pan. 

  1. Roast 40–45 minutes until chicken is cooked through and potatoes are golden. 

This Mediterranean-inspired dish is bright, zesty, and only takes one pan to pull together. 

Fun Fact: The word oregano comes from Greek, meaning “joy of the mountains”; so every sprinkle is basically a little bite of happiness.
