Carrot Raisin Salad 

Ingredients: 

  • 4 cups shredded carrots 

  • 1 cup raisins 

  • ¼ cup plain Greek yogurt 

  • ¼ cup mayonnaise 

  • 2 Tablespoons honey 

  • 1 Tablespoon lemon juice 

  • pinch of salt 

Instructions: 

  1. If you haven't already, peel and shred your carrots. 

  1. Add shredded carrots and raisins to a medium mixing bowl. Add Greek yogurt, mayo, honey, lemon juice, and salt. 

  1. Stir to combine until everything is coated with the dressing. 

This creamy carrot-raisin salad combines crisp, shredded carrots and sweet raisins with a light honey-lemon Greek yogurt dressing for a refreshing, balanced side dish.  

Fun fact: Carrots are rich in beta-carotene, which the body converts into vitamin A to support eye health and immune function.
