Slow Cooker Creamy Sun-Dried Tomato Chicken 

Ingredients: 

  • 4 chicken breasts 

  • 1 jar 7 oz sun-dried tomatoes in oil 

  • 2 garlic cloves minced 

  • 1 small onion finely diced 

  • 1.5 tablespoons tomato paste 

  • 1 cup chicken stock 

  • ¾ cup heavy cream 

  • 6 oz cream cheese cubed 

  • 1 teaspoon dried basil 

  • 1 teaspoon dried oregano 

  • ¼ teaspoons red pepper flakes 

  • ¾ teaspoons salt 

  • ¼ teaspoons black pepper 

  • 1.5 tablespoons cornstarch for thickening 

  • Fresh basil for garnish 

Instructions: 

  1. Place chicken breasts in slow cooker. 

  1. Chop half the sun-dried tomatoes, leave others whole. Add to cooker with their oil. Add garlic, onion, tomato paste, stock, cream, spices, and half the cream cheese. 

  1. Cook on LOW 6 hours or HIGH 3-4 hours. 

  1. Remove chicken, shred or slice. 

  1. Mix cornstarch with 2 tablespoons cold water. Stir into sauce. Return chicken to pot. Add remaining cream cheese. 

  1. Cook additional 20-30 minutes until sauce thickens. 

  1. For extra richness, stir in ⅓ cup parmesan cheese at the end. 

Serve over pasta, rice, or with crusty bread. Garnish with fresh basil. 

Creamy sun-dried tomato chicken slow-cooked with garlic, herbs, and cream cheese creates a rich, comforting dish that pairs perfectly with pasta, rice, or warm crusty bread. 

Fun Fact: Sun-dried tomatoes are simply tomatoes that have had most of their water removed by drying, which concentrates their flavor and actually makes certain nutrients like lycopene even more potent than in fresh tomatoes.
