Chicken Fried Rice

Ingredients:

  • 1 lb boneless, skinless chicken
  • 1 12 oz bag of frozen peas, carrots, and corn
  • 2 cups rice (can substitute cauliflower rice for a healthier option!)
  • 1 12 oz bag of frozen broccoli cuts
  • 1 small onion
  • 1 12 oz can pineapples
  • 1 cup cashews
  • 2 large eggs
  • Garlic powder
  • Onion powder
  • Chicken seasoning
  • 3 tbsp butter
  • 3 tbsp oil

Instructions:

  1. In a large skillet, heat oil on medium heat.
  2. Put rice in a rice cooker or cook on the stove in a pot.
  3. Cut chicken into cubes and place them in the skillet. Add salt, pepper, chicken seasoning, onion powder, and garlic powder to your liking.
  4. Once the rice is done, remove the chicken from the skillet.
  5. Add butter, rice, eggs, and the onion powder, garlic powder, and chicken seasoning. Stir everything together until the eggs are done.
  6. Add all vegetables, the onion, chicken, pineapples, and cashews. Cook on low for 15 minutes.
  7. Add your favorite sauce and enjoy!

Feel free to adjust the seasoning and ingredients to suit your taste preferences. Enjoy your delicious Chicken Fried Rice!
