
Avocado and Chickpea Salad:
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- Juice of 1-2 limes
- 2 tablespoons extra-virgin olive oil
- Salt and pepper to taste
- Optional: Feta cheese or goat cheese for added flavor
Instructions:
- In a large bowl, combine the chickpeas, diced avocados, cherry tomatoes, red onion, and cilantro or parsley.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad ingredients and gently toss to combine.
- If desired, crumble feta cheese or goat cheese over the top for added flavor.
- Adjust salt and pepper to taste, and serve immediately.
