Avocado and Chickpea Salad:

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro or parsley, chopped
  • Juice of 1-2 limes
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • Optional: Feta cheese or goat cheese for added flavor

Instructions:

  1. In a large bowl, combine the chickpeas, diced avocados, cherry tomatoes, red onion, and cilantro or parsley.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad ingredients and gently toss to combine.
  4. If desired, crumble feta cheese or goat cheese over the top for added flavor.
  5. Adjust salt and pepper to taste, and serve immediately.

This Avocado and Chickpea Salad is not only quick to make but also packed with healthy fats, fiber, and protein. It makes for a satisfying and refreshing dish, perfect for a light lunch or side dish. Enjoy!
